CAPRESE SALAD WITH A TWIST



Who says Caprese salad is only an appetizer? You can totally make it into a meal! I saw this recipe by Jaime Oliver online and decided to recreate it for lunch. It is easy to do and fairly quick to prepare. On top of that, it just requires seven ingredients. That's it. Seven ingredients and you're done. I think this is the perfect meal for those lazy days when you don't want to move around the kitchen so much but still, want to eat good food. 


The original Caprese salad is made up of sliced tomatoes and fresh mozzarella, fresh basil, olive oil, salt, and pepper. JO added roasted peppers, I'm guessing, for a more savory taste. Also, having the pepper in the salad elevated the entire dish into a meal rather than just an appetizer.

CAPRESE SALAD


Yield: 2 servings

Ingredients:

1 big red bell pepper

2 fresh mozzarella

200g cherry tomatoes (or normal tomatoes)
olive oil
basil leaf
salt and pepper

Instructions:
  1. Put the red bell pepper directly onto the gas flame. Remove once it blackens. 
  2. Place the pepper in a bowl and cover with cling film. Allow to cool down. 
  3. While waiting, cut the cherry tomatoes into quarters and the fresh mozzarella into small pieces. 
  4. Remove and discard the charred skin and seeds of the bell pepper. 
  5. Tear the bell pepper apart into thin strips. 
  6. Put the cut mozzarella into a bowl, add the strips of bell pepper on top and then add the cherry tomatoes. 
  7. Add chopped basil leaf and drizzle the salad with olive oil. 
  8. Add salt and pepper to taste. 

There you have it. You have made a delicious meal for two. As suggested in the original recipe, using fresh basil and fresh mozzarella would give the best and tastiest result. This is my favourite salad and I have even impressed my Italian husband with this recipe.

P.S.

Just a small trivia: The original Caprese salad, just like pizza Margherita, features the colours of the Italian flag – green, white, and red. Isn’t it cool?
